TURKISH LENTIL SOUP WITH FRESH PARSLEY

Ingredients:
- 1 Tbsp flour
- 2 Tbsp vegetable oil
- 1 Tbsp butter
- 1 cup red lentils, washed and drained
- 1 onion, chopped
- 5 cups broth of your choice (vegetable, chicken or beef)
- 1 handful of fresh parsley, chopped
- Salt and pepper

Directions:
1) Heat oil and butter over medium-low heat in a large soup pot and add the chopped onion and flour. Stir for a couple of minutes
2) Add lentils, 5 cups of broth, chopped fresh parsley, salt and pepper. Bring to a boil then reduce the heat to a simmer. Allow to cook, covered, until the lentils have become swollen and are falling apart
3) Blend the soup using a blender
4) Serve the soup hot with lemon wedges, chili flakes and Turkish bread
