Ingredients:
- 750 g frozen anchovy, defrosted
- 1 cup cornmeal
- 1 tsp salt
- 1/2 cup sunflower oil
Directions:
1) Cut the heads off (because heads absorb too much oil) and wash with cold water, drain
2) Put them in a bowl, sprinkle the salt and blend
3) Pour the oil into a large skillet and heat it up over high-medium heat
4) Place the cornmeal in a plate and dip the anchovy by holding from its tail. To remove the excess cornmeal, shake the fish off
5) Fry till they turn to a golden fried color, approximately for 4-5 minutes
6) Turn halfway through. When they are done, place the fried anchovy on a plate with paper towel to absorb the excess oil
7) Serve with lemon, arugula, onion and radish
