Ingredients:
- 1 cup white kidney beans (to save time, we preferred ready-to-use canned beans)
- 1 green onion, finely chopped
- 1 carrot, grated
- 1/2 cucumber, chopped
- 1 handful of fresh parsley, finely chopped
- 1 handful of fresh dill, finely chopped
- 2 Tbsp olive oil
- 2 Tbsp apple vinegar
- Salt, to taste
Directions:
1) Drain and add the (ready-to-use) beans in a large bowl
2) Add all the chopped vegetables and herbs to the beans
3) Mix alle the ingredients. Season with salt
4) Add the olive oil and apple vinegar to the salad
5) Mix well and serve cold
