Ingredients:
- 3 Tbsp tarhana
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 Tbsp tomato paste
- 4 cups water
Directions:
1) Add butter, olive oil, tomato paste and tarhana in a pan and sauté for few minutes
2) Add the water and bring the soup to boil
3) Stir constantly for approximately 20 minutes
4) Serve with Turkish pide
Tarhana soup starts off as tarhana dough. The preparation of tarhana dough is a process that takes days. In Turkey, tarhana is made up of various ingredients that can include: bulgur wheat or flour, yeast, Turkish yoghurt, tomato paste, onion, tomato, herbs, stock, red pepper,… and then it’s dried, sometimes out in the sun, and then, eventually, somehow, the final result is the crumbled dough you see in the photo above.
