Ingredients:
- 200 g red lentils
- 200 g fine bulgur wheat
- 1 red onion, finely chopped
- 50 ml olive oil
- 1 Tbsp tomato purée
- 1 tsp paprika powder
- 1 small bunch of parsley, finely chopped
- Salt and pepper, to taste
*For garnish: lettuce leaves and lemon slices
Directions:
1) Wash the lentils and cook them in a pan with two times their volume of water for until soft
2) Near the end of cooking time, add the bulgur and cook for more 2 min.
3) Turn off the heat and allow to stand for 20 min. Drain any excess water
4) In a pan, fry the onion in the olive oil, add the tomato purée and remove
5) Add the onion mix with the lentil-bulgur mix into a bowl
6) Add the remaining ingredients, combine well and allow to cool
7) Shape the mixture into walnut-sized balls and serve with lettuce leaves and lemon slices
