TRADITIONAL TURKISH DRIED WHITE BEAN STEW

Ingredients:
- 400 g white beans
- 2 Tbsp butter
- 2 Tbsp olive oil
- 1 large onion, finely chopped
- 2 Tbsp tomato paste
- 1 green pepper, chopped
- 2 tomatoes, chopped
- 1,5 L lamb or beef stock or water
- Fresh parsley, finely chopped
- 1 tsp paprika powder
- Salt

Directions:
1) Soak the beans overnight. Rinse them well, drain and boil for about 30 minutes until they are just starting to become tender. Drain and put to one side
2) Add the chopped onion with butter and olive oil in a large pot and brown it lightly
3) Add the peeled and chopped tomatoes, the chopped pepper, the chopped fresh parsley and the paprika powder and the salt and stir a few seconds
4) Pour the beans and the stock into the pot
5) Cover and cook on a low heat until the beans are nice and tender
6) Serve the Turkish dried white bean stew with Turkish bread and yogurt
