Ingredients:
- 1 onion, chopped
- 2 Tbsp olive oil
- 500 g fresh spinach, chopped
- 1 tsp tomato paste
- 1 tsp paprika powder
- 2 eggs
- Salt and pepper, to taste
Directions:
1) Sauté chopped onion in olive oil for 5 minutes in a pan
2) Add coarsely chopped spinach, tomato paste, paprika powder, salt and pepper and cook for a few minutes
3) Transfer the onion-spinach mix to two oven safe ceramic bowls and make egg-size holes in the middle
4) Slip one egg into each hole
5) Cover and bake in preheated oven (200°C) for about 10-15 minutes until the whites are set
6) Serve hot
