Ingredients:
- 1 cup coarse bulgur wheat
- 1 onion, chopped
- 2 Tbsp butter
- 2 Tbsp olive oil
- 2 cups hot water
- Salt and pepper, to taste
Directions:
1) In a deep saucepan, heat the olive oil and melt the butter. Add the chopped onion and sauté for a few minutes on a medium heat until the onion starts to sweat
2) Add the bulgur wheat and stir around for a couple of minutes
3) Turn the heat to high, add the chicken stock, salt and pepper
4) Give everything one or two stirs and bring to the boil
5) As soon as the bulgur wheat starts to boil, place a lid on the pan and return the heat to medium or low. Simmer the bulgur wheat until the juices have been absorbed
6) Remove from the heat and leave the 'bulgur pilavi' covered for at least another half hour
7) Remove the lid, give the 'bulgur pilavi' a stir around and serve
