Ingredients:
- 1 kg ripe figs
- 3 cups sugar
- 1 cup water
- 1 Tbsp fresh lemon juice
Directions:
1) Cut each washed fig into four pieces
2) Add the figs, sugar, water and the lemon juice to a large saucepan. Bring to a boil, stirring to dissolve the sugar
3) Reduce the heat to medium-low and simmer for about 45-50 minutes, stirring occasionally. The syrup will darken
4) Pour the figs and syrup into clean jars. Seal tightly and store for a couple days before eating. The preserves will keep in the refrigerator for a couple months
5) Spread on slices of toasted bread for a light breakfast or snack
