DALYAN KÖFTE (Turkish meatloaf roll with veggie)

Ingredients:
- 1 kg grounded beef
- 1 onion
- 1 garlic clove
- 1 handful of parsley
- 1 egg
- 2 thick slices bread
- 1 tsp dried mint
- 1 tsp chili flakes
- Salt and pepper, to taste

*For filling:
- 100 g canned peas
- 50 g canned corn
- 2 carrots, chopped and boiled a bit

*For cooking: 2 Tbsp olive oil

* For the sauce:
- 2 Tbsp olive oil
- 1 Tbsp tomato paste
- 2 garlic cloves, crushed
- Salt and pepper, to taste
- 100 ml water

Directions:
1) Use a food processor to crumble the bread, onion, garlic and parsley. Place all the ingredients of the meatball in a bowl. Knead with your hands for about 5 min. until all the ingredients are combined. The more you knead, the better!
2) Keep in the fridge for at least 30 min. to rest. When you take out of the fridge again, knead again and start giving shape
3) Preheat the oven to 160°C. Spread a baking paper on an oven tray
4) Spread evenly all the meat mixture on the tray. Make rectangular shape. Standing on the wider side of the rectangular, place all the filling in a line. Roll the corners to meet in the middle to form a lof shape. Close the ends tight. Turn the log over so the meeting line is facing downwards!
5) Brush some olive oil evenly all around the meat and cook in the preheated oven for about 45 min. Once in a while take the stock that will occur in the oven tray with a spoon and spread it on top of the meat, so it doesn't get dry!
6) Rest for 5 min. after cooked
7) Add all the sauce ingredients in a pot and cook for about 5 min. until well combined and serve the dalyan köfte with this sauce
