Ingredients:
- 1/4 cup rice
- 3 cups water
- 2 cups chicken stock
- 2 cups Turkish yogurt
- 1 tsp dried mint
- 1 egg
- 2 Tbsp flour
- 2 Tbsp butter
- Salt, to taste
Directions:
1) Boil rice in 3 cups of water and 2 cups of chicken stock with salt until soft
2) In a bowl, beat the egg with dried mint and flour well, and then add yogurt and mix
3) Add few tablespoons boiling water mix to the yogurt mix and stir well. This step is very important, otherwise yogurt would curdle!
4) Slowly pour this mix into the soup. Keep stirring! First let it boil on medium and then turn it down and cook for another 15-20 minutes
5) Heat butter in a pan. Then, pour it into soup and serve the soup hot with a pinch of dried mint
