FISH ON VEGGIE

Ingredients:
- 4 fillets of Pangasius fish, frozen
- 1 onion, chopped
- 2 carrots, sliced
- 1 stalk celery, chopped
- 4 potatoes, chopped
- 4 tomatoes, peeled and chopped
- 1 tsp tomato paste
- 3 Tbsp olive oil
- Salt and pepper, to taste

Directions:
1) Heat the olive oil in a pan. Add the onion, carrots, celery and potatoes and sauté for about 2-3 min. until the vegetables are soft
2) Then add the tomato paste and chopped tomatoes
3) Turn up the heat once again, let it cook fora bout 10 min.
4) Lastly, add the fish fillets and cook for another 10 min. on low to medium heat
5) Season with salt and pepper
6) Sprinkle with parsley and serve
