Ingredients:
- 1/2 cup lentils, boiled
- 1/2 cup eriste ( = Turkish egg noodle)
- 1/2 onion, finely chopped
- 3 cups chicken stock
- 2 cups water, boiled
- 2 Tbsp olive oil
- 1 Tbsp tomato paste
- 1 tsp chili flakes
- 1 tsp dried mint
- 1 tsp paprika powder
- 1 tsp salt
Directions:
1) Sauté the chopped onion with olive oil in a large pan. Add the tomato paste, chili flakes, mint, paprika and salt and sauté for about few sec.
2) Add the lentils, chicken stock and boiled water. Bring to boil and reduce the heat to low and cover
3) Add the eriste to the soup, cover the pan and let it simmer slowly for about 20 min. until all the ingredients are soft and tender
4) Remove the pan from the heat. Serve the soup hot
