Ingredients:
- 1 cup fine bulgur
- 1 cup hot water
- 1 red onion, chopped
- 1 green pepper, chopped
- 2 carrots, grated
- ¼ cup olive oil
- 2 Tbsp tomato paste
- Juice of 1 fresh lemon
- 1 handful of parsley, finely chopped
- 1 tsp dried mint
- 1 tsp chili flakes
- Salt and pepper, to taste
- ½ pomegranate (to serve)
Directions:
1) Pour the bulgur in a bowl, add hot water. Stir and cover for 10 min. until the water is absorbed
2) Once the bulgur is cooked and tender, stir it with a fork. Break up any lumps
3) Pour the olive oil in a pan and add the chopped onion, green pepper, grated carrots and tomato paste
4) Stir and fry the mixture for 2-3 min. and take pan off the heat
5) Add the mixture to the bulgur, season with salt and pepper and combine well
6) Add the chopped parsley, lemon juice, mint and chili flakes and stir well
7) Transfer the cooled kisir to a clean bowl and serve with pomegranate on top
