NEW YEAR COOKIES

Ingredients:
- 225 g unsalted butter, softened
- 1 ¼ cups granulated sugar
- 3 large egg yolks
- 1 Tbsp vanilla extract
- ¼ tsp salt
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp cream of tartar

*For topping:
- ½ cup sugar, sprinkles, colored sugar, other cookie decorations, as desired

Directions:
1) Heat the oven to 180°C and arrange a rack in the middle
2) Combine butter and sugar in the bowl of a stand mixer fitted with a paddle attachment and mix on medium speed for about 2 min.
3) Scrape down the bowl sides and bottom. Add yolks, vanilla and salt and mix until smooth for about 30 sec.
4) Add flour, baking soda and cream of tartar. Mix on low speed until the dough comes together
5) Scoop dough and roll between your hands until smooth
6) Roll the dough to a ¼-inch thickness and slice the cookies with cookie cutters into desired shapes
7) Dip the cookies in sugar and transfer to the prepared baking sheet and repeat with remaining dough
8) Bake the cookies until they are golden brown around the edges, for about 15-16 min.
9) Immediately transfer to a rack to cool completely
