KALBURABASTI (Turkish sweet pastry with nuts)

Ingredients:
*For the cookie dough:
- 1 kg all-purpose flour
- 4 eggs
- 500 g butter, unsalted and at room temperature
- 20 g baking powder
- 300 g confectioner sugar
- 300 g hazelnut flour

*For topping:
- 1 egg yolk

*For the syrup:
- 1 L water
- 1 kg caster sugar
- 1 Tbsp lemon juice

Directions:
1) Add all the syrup ingredients in a pot and leave to simmer for about 5 min
2) Remove from the heat and set aside to cool down
3) In a large mixing bowl combine butter, eggs, sugar, hazelnut flour and baking powder
4) Add flour step by step to form a dough that does not stick hands
5) Divide the cookie dough in equal portions and give them ‘a flat egg shape’ with your hands
6)  Place the cookies on a baking sheet, brush some egg yolk on top and bake in a 180°C preheated oven until golden
7) After removing the cookies from the oven, set aside for 5 min.
8) Pour the syrup over cookies and set aside until the cookies soak all the syrup
9) Serve with vanilla ice cream
