IRMIK HELVASI (is one of the most well known halvas in Turkey, made with coarse semolina and nuts)

Ingredients:
- 1 cup coarse semolina
- 1 cup sugar
- 2 cups milk
- 4 Tbsp butter, unsalted
- 2 Tbsp vegetable oil
- ½ cup roasted walnuts, finely chopped

Directions:
1) Melt the butter and vegetable oil in a heavy pan. Stir in the semolina and cook over medium heat, stirring all the time until lightly browned
2) In the same time, warm the milk in a separate pan and stir in the sugar. Mix well and let the sugar dissolve
3) Add the chopped walnuts into semolina and mix
4) Pour the milk and sugar mixture into semolina and walnuts mixture. Be careful! Mix well and cook over low heat until the milk has been absorbed
5) Turn the heat off and cover the with the lid, let the helva rest for about 15-20 min.
6) Serve the helva with a dust of cinnamon or grated pistachio
