KABAK DOLMASI (zucchini stuffed with meat and bulgur)

Ingredients:
- 3 zucchini (straight as you can get)
- 200 g ground beef
- 1 onion, finely chopped
- 1 tomato, grated
- 1 handful of parsley, finely chopped
- 1 garlic clove, grated
- 1/2 cup fine bulgur
- 1 Tbsp tomato paste
- 1 Tbsp pomegranate molasses
- 4 Tbsp olive oil
- 1 tsp dried mint
- 1 tsp chili flakes (optional!)
- Salt and pepper, to taste

*For the sauce:
- 1 Tbsp pomegranate molasses
- 2 cups water
- Salt, to taste

Directions:
1) Mix the ground beef, chopped onion, fine bulgur, tomato paste, chopped parsley, grated tomato, grated garlic, pomegranate molasses, olive oil, mint, chili flakes, salt and pepper in a large mixing bowl
2) Cut the ends off the zucchini, then cut them in 4 cm pieces. Use a zucchini corer or a spoon and core out the zucchini
3) Stuff each zucchini with the bulgur mixture and put them in a large pan
4) For the sauce, mix the water, pomegranate molasses and salt and pour over the stuffed zucchini
5) Place on high heat until it comes to a boil
6) Lower the heat to medium and cook for about 40-50 min.
7) Serve with garlic yogurt
