ETLI KURU FASÜLYE (traditional Turkish dried white bean stew with meat)

Ingredients:
- 400 g white beans
- 250 g  lamb or beef chopped into small chunks
- 3 Tbsp butter
- 2 Tbsp olive oil
- 1 large onion, finely chopped
- 2 Tbsp tomato paste
- 1 green pepper, chopped
- 2 tomatoes, chopped
- 1,5 L lamb or beef stock or water
- Fresh parsley, finely chopped
- 1 tsp paprika powder
- Salt

Directions:
1) Soak the beans overnight. Rinse them well, drain and boil for about 30 minutes until they are just starting to become tender. Drain and put to one side
2) Add the meat to the preheated pan with butter and olive oil and brown it lightly. Allow any juices to evaporate
3) Add the chopped onion and cook until golden
4) Add the peeled and chopped tomatoes, the chopped pepper, the chopped fresh parsley and the paprika powder and the salt
5) Cover and cook on a low heat for about 30 minutes
6) Add the beans and the stock, cover and let the stew simmer until the beans are nice and tender
